Simplest way to add HTML as a String to a new Nokogiri HTML document body?

I have a bunch of content from the body of one HTML file. How do I put that into the body of a new blank-slate HTML document using Nokogiri? Something like this, but with Nokogiri:

<!DOCTYPE html PUBLIC "-//W3C//DTD XHTML 1.0 Transitional//EN" "http://www.w3.org/TR/xhtml1/DTD/xhtml1-transitional.dtd">
<html xmlns="http://www.w3.org/1999/xhtml">
    <head>
        <title>Default Title</title>
    </head>
    <body class='default-class'>
        <%= yield :body %>
    </body>
</html>
