Web hosting colo stack, what do i need

I'm looking to colocate a website, obviously running a few apache servers, mysql cluster, SAN servers and load balancer. What else do I need to protect the servers and what would be the best method for DNS as all the web side of things will be in the colo centre and email hosted with another company?
