• Ingredient Substitutes while Baking

  In our normal cooking, we substitute the vegetables for the gravies we prepare. When we start baking, we look for a good recipe. At least one or two ingredient will be missing. We do not know where to substitute what to bring same output. So we finally drop the plan of baking. Again after a month, we get the interest in baking. Again one or two lack of ingredient and that’s it. We keep on doing this for months. When I was going through the cooking blogs, I came across a site with the Ingredient Substitutes for Baking: (*) is to indicate that this substitution is ideal from personal experience. When using the substitutions that include liquid, reduce other liquid in recipe accordingly Baking Soda(1 tsp) 3 tsp Baking Powder ( and reduce the acidic ingredients in the recipe. Ex Instead of buttermilk add milk) 1 tsp potassium bicarbonate Ideal substitution – 2 tsp Baking powder and omit salt in recipe Cream of tartar (1 tsp) 1 teaspoon white vinegar 1 tsp lemon juice Notes from What’s Cooking America – If cream of tartar is used along with baking soda in a cake or cookie recipe, omit both and use baking powder instead. If it calls for baking soda and cream of tarter, just use baking powder.Normally, when cream of tartar is used in a cookie, it is used together with baking soda. The two of them combined work like double-acting baking powder. When substituting for cream of tartar, you must also substitute for the baking soda. Canola oil) Fruit purees (example- applesauce, pureed prunes, baby-food fruits). Add it along with some vegetable oil and reduce any other sweeteners needed in the recipe since fruit purees are already sweet. 1 cup polyunsaturated margarine (HV) 3/4 cup polyunsaturated oil like safflower oil (HV) 1 cup mild olive oil (not extra virgin)(HV) Note: Butter creates the flakiness and the richness which an oil/purees cant provide. If you don’t want to compromise that much to taste, replace half the butter with the substitutions. Shortening(1 cup) 1 cup polyunsaturated margarine like Earth Balance or Smart Balance(HV) 1 cup + 2tbsp Butter ( better tasting than shortening but more expensive and has cholesterol and a higher level of saturated fat; makes cookies less crunchy, bread crusts more crispy) 1 cup + 2 tbsp Margarine (better tasting than shortening but more expensive; makes cookies less crunchy, bread crusts tougher) 1 Cup – 2tbsp Lard (Has cholesterol and a higher level of saturated fat) Oil equal amount of apple sauce stiffly beaten egg whites into batter equal parts mashed banana equal parts yogurt prune puree grated raw zucchini or seeds removed if cooked. Works well in quick breads/muffins/coffee cakes and does not alter taste pumpkin puree (if the recipe can handle the taste change) Low fat cottage cheese (use only half of the required fat in the recipe). Can give rubbery texture to the end result Silken Tofu – (use only half of the required fat in the recipe). Can give rubbery texture to the end result Equal parts of fruit juice Note: Fruit purees can alter the taste of the final product is used in large quantities. Cream Cheese (1 cup) 4 tbsps. margarine plus 1 cup low-fat cottage cheese – blended. Add few teaspoons of fat-free milk if needed (HV) Heavy Cream (1 cup) 1 cup evaporated skim milk (or full fat milk) 1/2 cup low fat Yogurt plus 1/2 low fat Cottage Cheese (HV) 1/2 cup Yogurt plus 1/2 Cottage Cheese Sour Cream (1 cup) 1 cup plain yogurt (HV) 3/4 cup buttermilk or plain yogurt plus 1/3 cup melted butter 1 cup crème fraiche 1 tablespoon lemon juice or vinegar plus enough whole milk to fill 1 cup (let stand 5-10 minutes) 1/2 cup low-fat cottage cheese plus 1/2 cup low-fat or nonfat yogurt (HV) 1 cup fat-free sour cream (HV) Note: How to Make Maple Syrup Substitute at home For 1 Cup Maple Syrup 1/2 cup granulated sugar 1 cup brown sugar, firmly packed 1 cup boiling water 1 teaspoon butter 1 teaspoon maple extract or vanilla extract Method In a heavy saucepan, place the granulated sugar and keep stirring until it melts and turns slightly brown. Alternatively in another pan, place brown sugar and water and bring to a boil without stirring. Now mix both the sugars and simmer in low heat until they come together as one thick syrup. Remove from heat, add butter and the extract. Use this in place of maple syrup. Store it in a fridge in an air tight container. • Craftsmanship is ALL that Matters

  Today, I'm going to talk about a touchy subject: the notion of working in a company that doesn't use the prescribed "best practices" in its software development endeavours.  Over the years I have, using a variety of pseudonyms, asked this question on popular programming forums.  Although I always add in some minor variation of the story to avoid suspicion that it's the same person posting, the crux of the tale remains the same: A Programmer’s Tale A junior software developer has just started a new job at an average company, creating average line-of-business applications for internal use (the most typical scenario programmers find themselves in).  This hypothetical newbie has spent a lot of time reading up on the "theory" of software development, devouring books, blogs and screencasts from well-known and respected software developers in the community in order to broaden his knowledge and "do what the pros do".  He begins his new job, eager to apply what he's learned on a real-world project only to discover that his new teammates doesn't use any of those concepts and techniques.  They hack their way through development, or in a best-case scenario use some homebrew, thrown-together semblance of a framework for their applications that follows not one of the best practices suggested by the “elite” in the software community - things like TDD (TDD as a "best practice" is the only subjective part of this post, but it's included here due to a very large following of respected developers who consider it one), the SOLID principles, well-known and venerable tools, even version control in a worst case and truly nightmarish scenario.  Our protagonist is frustrated that he isn't doing things the "proper" way - a way he's spent personal time digesting and learning about and, more importantly, a way that some of the top developers in the industry advocate - and turns to a forum to ask the advice of his peers. Invariably the answer I, in the guise of the concerned newbie, will receive is that A) I don't know anything and should just shut my mouth and sling code the bad way like everybody else on the team, and B) These "best practices" are fade or a joke, and the only thing that matters is shipping software to your customers. I am here today to say that anyone who says this, or anything like it, is not only full of crap but indicative of exactly the type of “developer” that has helped to give our industry a bad name.  Here is why: One Who Knows Nothing, Understands Nothing On one hand, you have the cognoscenti of the .NET development world.  Guys like James Avery, Jeremy Miller, Ayende Rahien and Rob Conery; all well-respected and noted programmers that are pretty much our version of celebrities.  These guys write blogs, books, and post videos outlining the "correct" way of writing software to make sure it not only works but is maintainable and extensible and a joy to work with.  They tout the virtues of the SOLID principles, or of using TDD/BDD, or using a mature ORM like NHibernate, Subsonic or even Entity Framework. On the other hand, you have Joe Everyman, Lead Software Developer at Initrode Corporation - in our hypothetical story Joe is the junior developer's new boss.  Joe's been with Initrode for 10 years, starting as the company’s very first programmer and over the years building up a little fiefdom of his own until at the present he’s in charge of all Initrode’s software development.  Joe writes code the same way he always has, without bothering to learn much, if anything.  He looked at NHibernate once and found it was "too hard", so he uses a primitive implementation of the TableDataGateway pattern as a wrapper around SqlClient.SqlConnection and SqlClient.SqlCommand instead of an actual ORM (or, in a better case scenario, has created his own ORM); the thought of using LINQ or Entity Framework or really anything other than his own hastily homebrew solution has never occurred to him.  He doesn't understand TDD and considers “testing” to be using the .NET debugger to step through code, or simply loading up an app and entering some values to see if it works.  He doesn't really understand SOLID, and he doesn't care to.  He's worked as a programmer for years, and that's all that counts.  Right?  WRONG. Who would you rather trust?  Someone with years of experience and who writes books, creates well-known software and is akin to a celebrity, or someone with no credibility outside their own minute environment who throws around their clout and company seniority as the "proof" of their ability?  Joe Everyman may have years of experience at Initrode as a programmer, and says to do things "his way" but someone like Jeremy Miller or Ayende Rahien have years of experience at companies just like Initrode, THEY know ten times more than Joe Everyman knows or could ever hope to know, and THEY say to do things "this way". Here's another way of thinking about it: If you wanted to get into politics and needed advice on the best way to do it, would you rather listen to the mayor of Hicktown, USA or Barack Obama?  One is a small-time nobody while the other is very well-known and, as such, would probably have much more accurate and beneficial advice. NOTE: The selection of Barack Obama as an example in no way, shape, or form suggests a political affiliation or political bent to this post or blog, and no political innuendo should be mistakenly read from it; the intent was merely to compare a small-time persona with a well-known persona in a non-software field.  Feel free to replace the name "Barack Obama" with any well-known Congressman, Senator or US President of your choice. DIY Considered Harmful I will say right now that the homebrew development environment is the WORST one for an aspiring programmer, because it relies on nothing outside it's own little box - no useful skill outside of the small pond.  If you are forced to use some half-baked, homebrew ORM created by your Director of Software, you are not learning anything valuable you can take with you in the future; now, if you plan to stay at Initrode for 10 years like Joe Everyman, this is fine and dandy.  However if, like most of us, you want to advance your career outside a very narrow space you will do more harm than good by sticking it out in an environment where you, to be frank, know better than everybody else because you are aware of alternative and, in almost most cases, better tools for the job.  A junior developer who understands why the SOLID principles are good to follow, or why TDD is beneficial, or who knows that it's better to use NHibernate/Subsonic/EF/LINQ/well-known ORM versus some in-house one knows better than a senior developer with 20 years experience who doesn't understand any of that, plain and simple.  Anyone who disagrees is either a liar, or someone who, just like Joe Everyman, Lead Developer, relies on seniority and tenure rather than adapting their knowledge as things evolve. In many cases, the Joe Everymans of the world act this way out of fear - they cannot possibly fathom that a “junior” could know more than them; after all, they’ve spent 10 or more years in the same company, doing the same job, cranking out the same shoddy software.  And here comes a newbie who hasn’t spent 10+ years doing the same things, with a fresh and often radical take on the craft, and Joe Everyman is afraid he might have to put some real effort into his career again instead of just pointing to his 10 years of service at Initrode as “proof” that he’s good, or that he might have to learn something new to improve; in most cases the problem is Joe Everyman, and by extension Initrode itself, has a mentality of just being “good enough”, and mediocrity is the rule of the day. A Thorn Bush is No Place for a Phoenix My advice is that if you work on a team where they don't use the best practices that some of the most famous developers in our field say is the "right" way to do things (and have legions of people who agree), and YOU are aware of these practices and can see why they work, then LEAVE the company.  Find a company where they DO care about quality, and craftsmanship, otherwise you will never be happy.  There is no point in "dumbing" yourself down to the level of your co-workers and slinging code without care to craftsmanship.  In 95% of these situations there will be no point in bringing it to the attention of Joe Everyman because he won't listen; he might even get upset that someone is trying to "upstage" him and fire the newbie, and replace someone with loads of untapped potential with a drone that will just nod affirmatively and grind out the tasks assigned without question. Find a company that has people smart enough to listen to the "best and brightest", and be happy.  Do not, I repeat, DO NOT waste away in a job working for ignorant people.  At the end of the day software development IS a craft, and a level of craftsmanship is REQUIRED for any serious professional.  When you have knowledgeable people with the credibility to back it up saying one thing, and small-time people who are, to put it bluntly, nobodies in the field saying and doing something totally different because they can't comprehend it, leave the nobodies to their own devices to fade into obscurity.  Work for a company that uses REAL software engineering techniques and really cares about craftsmanship.  The biggest issue affecting our career, and the reason software development has never been the respected, white-collar career it was meant to be, is because hacks and charlatans can pass themselves off as professional programmers without following a lick of good advice from programmers much better at the craft than they are.  These modern day snake-oil salesmen entrench themselves in companies by hoodwinking non-technical businesspeople and customers with their shoddy wares, end up in senior/lead/executive positions, and push their lack of knowledge on everybody unfortunate enough to work with/for/under them, crushing any dissent or voices of reason and change under their tyrannical heel and leaving behind a trail of dismayed and, often, unemployed junior developers who were made examples of to keep up the facade and avoid the shadow of doubt being cast upon them. To sum this up another way: If you surround yourself with learned people, you will learn.  Surround yourself with ignorant people who can't, as the saying goes, see the forest through the trees, and you'll learn nothing of any real value.  There is more to software development than just writing code, and the end goal should not be just "shipping software", it should be shipping software that is extensible, maintainable, and above all else software whose creation has broadened your knowledge in some capacity, even if a minor one.  An eager newbie who knows theory and thirsts for knowledge can easily be moulded and taught the advanced topics, but the same can't be said of someone who only cares about the finish line.  This industry needs more people espousing the benefits of software craftsmanship and proper software engineering techniques, and less Joe Everymans who are unwilling to adapt or foster new ways of thinking. Conclusion - I Cast “Protection from Fire” I am fairly certain this post will spark some controversy and might even invite the flames.  Please keep in mind these are opinions and nothing more.  A little healthy rant and subsequent flamewar can be good for the soul once in a while.  To paraphrase The Godfather: It helps to get rid of the bad blood.

• New to Ubuntu - 12.04.1 Kernel Panic on Installation

  I'm a complete Ubuntu and even Linux newbie. I'm learning here, so I'm grateful for any info to help me learn more about this. I have a Dell Dimension 2400 with a Pentium 4 and 1GB of RAM. It's older but it's only going to be doing some small stuff for me when I get it up and going. I've tried installing several versions of Linux (but I really, really want Ubuntu) and I keep getting a similar kernel panic message. The problem is I don't have a clue what that means or how to begin fixing it. I would appreciate any help to get my machine up and going. I have already tried Installing alternate Ubuntu versions Burning multiple 12.04.1 disks Installing other versions of Linux I have a picture of the screen to share; however, I can't post due to the fact that I don't have enough reputation points on this forum because I'm a newbie. I would be happy to email you a pic, if you think you can help.

• Updating scene graph in multithreaded game

  In a game with a render thread and a game logic thread the game logic thread needs to update the scene graph used by the render thread. I've read about ideas such as a queue of updates. Can someone describe to a newbie at scene graphs what kind of interface the scene graph exports. Presumably it would be rather complicated. So then how does a queue of updates get implemented in C++ in a way that can handle the complexity of the interface of the scene graph while also being type safe and efficient. Again I'm a newbie at scene graphs and C++.

• (PHP vs Python vs Perl) vs Ruby [closed]

  OK, here's what : I've programmed in over 20 different languages and now, because of a large project I'm currently working on for Mac OS X (in Objective-C/Cocoa), I need to make a final decision on which language to use for my background scripting + plugin functionality. Definitely, one factor that'll ultimately influence my decision is which one I'm most familiar with, which is PHP (one of the ugliest languages around, which I however adore... lol), then Python / Perl (the "proven values"... )... and then Ruby (which, to me, is almost confusing and I've only played with it for some time.) Now, here's my considerations : (As previously mentioned) Being familiar with it (anyway, if X is better in my case, I really don't mind studying it from scratch...) Speed Good interaction with the Shell + ease of integration with my Cocoa application Btw, some of the reasons that made me wonder if Ruby would be a good choice is : The hype around it (although, I still don't get why; but that's probably just me...) My major competitor (we're actually talking about the same type of software here) is using Ruby for its backend scripting almost exclusively (ok, along with some BASH). Isn't Ruby considered slower e.g. than Perl? Why did he choose that? Simply, a matter of personal taste? So... your thoughts?

• Can I use a desktop as a network server?

  Pardon me if I'm asking the wrong question. But I am a newbie in networking and I'm not sure what direction to go on this. I have just setup an Ubuntu Desktop. I am planning to convert it to a network server without losing the GUI interface (again, I'm a newbie) and use it to manage and monitor user access to a network with a small number of network terminals all running on Windows. My purpose is to use the new server to filter sites accessed by each terminals, monitor sites being visited by employees and grant access to both group and user-specific folders based on their IP address. Is this possible? What server software do I need to install? How do I structure the hardware? (I have a router, a hub, the Ubuntu server and the network terminals) How do I assign privileges to users and monitor them at the same time? Thank you in advance for your replies.

• Copying VBoxAdditions to usr/share/virtualbox folder

  Since for some reason VBox does not find the Additions on the internet, I was trying to install them in the Ubuntu directory Vbox is looking for them - which is: usr/share/virtualbox but I am denied permission to do so. Any way around it? I am relatively new to ubuntu (know how to use the GUI, but still learning how to talk to the machine proper, so many things will be new to me; used to be power user/analyst for MS Windows, 98-Vista, so not a PC newbie, but still I'd say Linux newbie).   Possible Duplicate: how to really master a programming language Let say about Java(just a sample, you can talk about C#, PHP, C++ ... it's just similar) and 10 (ten) levels, 1 is newbie and 10 is master. How can you identify someone at which level based on his knowledge? I do not tend to compare languages, I do tend to know what indicate a master or a newbie in a language and its (language's) based technology. Yeah, I know there aren't on earth a language stand alone, it always come with a technology with it.   I'm currently working on an iPhone app. This app has a login screen, also a signup screen. After the user has successfully signed up, I dismiss the signup view, then the app automatically logs in using the created account. After which, the login view is dismissed, showing the main view. I'm trying to modify this by immediately dismissing the login view, since I already have the account details of the user when the signup is successful. Basically, the ideal flow is: after the user successfully signs up, I save the username and password in a singleton class, then dismiss the signup view. When I get to the parent view (which is the login screen), I have a variable that checks if there was a successful signup. If that variable is true, I want to immediately dismiss the login view. However, I come across this error message: Data Formatters temporarily unavailable, will re-try after a 'continue'. (Unknown error loading shared library "/Developer/usr/lib/libXcodeDebuggerSupport.dylib") I'm not really sure why this happens. I have no problems dismissing the login view when I go through the actual login procedure - which of course also dismisses the login view if the user inputs a correct username and password. I'm not exactly sure, but I'm starting to think that the iPhone cannot handle dismissing 2 view controllers almost at the same time. Is it possible that I'm dismissing the login view too quickly? Is that a factor? Is there anyway for me to be able to dismiss 2 view controllers almost simultaneously without coming across this error message?

  I use Spring Security with Spring Framework 3 and when I tyr to login from homepage I get following error: 2010-04-26 12:16:39,525 [tomcat-http--2] WARN org.springframework.web.servlet.PageNotFound - No mapping found for HTTP request with URI [/AppName/app/j_spring_security_check] in DispatcherServlet with name 'Spring MVC Dispatcher Servlet' Spring Security is initialized as loggings tell and there are no errors. So what could be reason for this error? I have understood that j_spring_security_check is default url for Spring Security login chekeing servlet.

• Spring Framework 3 and session attributes

  I have form object that I set to request in GET request handler in my Spring controller. First time user enters to page, a new form object should be made and set to request. If user sends form, then form object is populated from request and now form object has all user givern attributes. Then form is validated and if validation is ok, then form is saved to database. If form is not validated, I want to save form object to session and then redirect to GET request handling page. When request is redirected to GET handler, then it should check if session contains form object. • iPhone SDK UIScrollView doesn't get touch events after moving it

  Hi! I'm subclassing UIScrollView and on the start I fill this ShowsScrollView with some items. After filling it, I setup frame and contentSize to this ShowsScrollView. Everything works fine for now, i get touches events, scrolling is working.. But after rotation to landscape, I change x and y coordinates of ShowsScrollView frame, to move it from bottom to top right corner. Then I resize it (change width and height of ShowsScrollView frame) and reorder items in this scroll. At the end I setup new contentSize. Now i get touches event only on first 1/4 of scrollview, scrolling also work only on 1/4 of scrollview, but scroll all items in scrollview. After all actions I write a log: NSLog(@"ViewController: setLandscape finished: size: %f, %f content: %f,%f",scrollView.frame.size.width,scrollView.frame.size.height, scrollView.contentSize.width, scrollView.contentSize.height ); Values are correct: ViewController: setLandscape finished: size: 390.000000, 723.000000 content: 390.000000,950.000000 On rotating back to portrait, I move and resize all thing back and everything works fine.. Please help!

• Entrepreneur Needs Programmers, Architects, or Engineers?

  Hi guys (Ladies included). I posted on a related site, but THIS is the place to be. I want to build a specialized website. I am an entrepreneur and refining valuations now for venture capitalsists: i.e., determining how much cash I will need. I need help in understanding what human resources I need (i.e., Software Programmers, Architects, Engineers, etc.)??? Trust me, I have read most--if not all--of the threads here on the subject, and I can tell you I am no closer to the answer than ever. Here's my technology problem: The website will include (2) main components: a search engine (web crawler)...and a very large database. The search engine will not be a competitor to google, obviously; however, it "will" require bots to scour the web. The website will be, basically, a statistical database....where users should be able to pull up any statistic from "numerous" fields. Like any entrepreneur with a web-based vision, I'm "hoping" to get 100+ million registered users eventually. However, practically, we will start as small as feasible. As regards the technology (database architecture, servers, etc.), I do want quality, quality, quality. My priorities are speed, and the capaility to be scalable...so that if I "did" get globally large, we could do it without having to re-engineer anything. In other words, I want the back-end and the "infrastructure" to be scalable and professional....with emphasis on quality. I am not an IT professional. Although I've built several Joomla-based websites, I'm just a rookie who's only used minor javascript coding to modify a few plug-ins and components. The business I'm trying to create requires specialization and experts. I want to define the problem and let a capable team create the final product, and I will stay totally hands off. So who do you guys suggest I hire to run this thing? A software engineer? I was thinking I would need a "database engineer," a "systems security engineer", and maybe 2 or 3 "programmers" for the search engine. Also a web designer...and maybe a part-time graphic designer...everyone working under a single software engineer. What do you guys think? Who should I hire?...I REALLY need help from some people in the industry (YOU guys) on this. Is this project do-able in 6 months? If so, how many people will I need? Who exactly needs to head up this thing?...Senior software engineer, an embedded engineer, a CC++ engineer, a java engineer, a database engineer? And do I build this thing is Ruby or Java?

  Hello! At the moment, I try to include addthis social-bookmarks to my site. My problem is, that I have to bookmark another link than the url on my site. Instead of www.example.com, I have to bookmark www.example.com?media=my-media-file. From the beginning: A User comes to my site. On my site are several movies. He can click on a movie thumbnail and watch the movie without reloading the site (javascript). Now he can click on my social bookmark icon to share this movie. Now the addthis framework thinks that the User want's to share www.example.com (cause this is whats in my url). But I want the user to share www.example.com?media=foo-bar . Opening www.example.com?media=foo-bar for the correct movie is still working, but no social bookmaring. I hope you understand my problem and can help me. I searched without success in the addthis api. So, can u help me?

• Hello World bootloader not working!

  Hello. I've been working through the tutorials on this webpage which progressively creates a bootloader that displays Hello World. The 2nd tutorial (where we attempt to get an "A" to be output) works perfectly, and yet the 1st tutorial doesn't work for me at all! (The BIOS completely ignores the floppy disk and boots straight into Windows). This is less of an issue, although any explanations would be appreciated. The real problem is that I can't get the 3rd tutorial to work. Instead on outputting "Hello World", I get an unusual character (and blinking cursor) in the bottom-left corner of the screen. It looks a bit like a smiley face inside a rounded rectangle. Does anyone know how to get Hello World to display as it should?
