• Ingredient Substitutes while Baking

  In our normal cooking, we substitute the vegetables for the gravies we prepare. When we start baking, we look for a good recipe. At least one or two ingredient will be missing. We do not know where to substitute what to bring same output. So we finally drop the plan of baking. Again after a month, we get the interest in baking. Again one or two lack of ingredient and that’s it. We keep on doing this for months. When I was going through the cooking blogs, I came across a site with the Ingredient Substitutes for Baking: (*) is to indicate that this substitution is ideal from personal experience. Flour Substitutes ( For 1 cup of Flour) All Purpose Flour 1/2 cup white cake flour plus 1/2 cup whole wheat flour 1 cup self-rising flour (omit using salt and baking powder if the recipe calls for it since self raising flour has it already) 1 cup plus 2 tablespoons cake flour 1/2 cup (75 grams) whole wheat flour 7/8 cup (130 grams) rice flour (starch) (do not replace all of the flour with the rice flour) 7/8 cup whole wheat Bread Flour 1 cup all purpose flour 1 cup all purpose flour plus 1 teaspoon wheat gluten (*) Cake Flour Place 2 tbsp cornstarch in 1 cup and fill the rest up with All Purpose flour (*) 1 cup all purpose flour minus 2 tablespoons Pastry flour Place 2 tbsp cornstarch in 1 cup and fill the rest up with All Purpose flour Equal parts of All purpose flour plus cake flour (*) Self-rising Flour 1½ teaspoons of baking powder plus ½ teaspoon of salt plus 1 cup of all-purpose flour. When using the substitutions that include liquid, reduce other liquid in recipe accordingly Baking Soda(1 tsp) 3 tsp Baking Powder ( and reduce the acidic ingredients in the recipe. Ex Instead of buttermilk add milk) 1 tsp potassium bicarbonate Ideal substitution – 2 tsp Baking powder and omit salt in recipe Cream of tartar (1 tsp) 1 teaspoon white vinegar 1 tsp lemon juice Notes from What’s Cooking America – If cream of tartar is used along with baking soda in a cake or cookie recipe, omit both and use baking powder instead. If it calls for baking soda and cream of tarter, just use baking powder.Normally, when cream of tartar is used in a cookie, it is used together with baking soda. The two of them combined work like double-acting baking powder. When substituting for cream of tartar, you must also substitute for the baking soda. If your recipe calls for baking soda and cream of tarter, just use baking powder. One teaspoon baking powder is equivalent to 1/4 teaspoon baking soda plus 5/8 teaspoon cream of tartar. If there is additional baking soda that does not fit into the equation, simply add it to the batter. Dips: 1 cup yogurt (drain through a cheesecloth-lined sieve for 30 minutes in the refrigerator for a thicker texture). Dips: 1 cup cottage cheese plus 1/4 cup yogurt or buttermilk, briefly whirled in a blender. Dips: 6 ounces cream cheese plus 3 tablespoons milk,briefly whirled in a blender. Lower fat: 1 cup low-fat cottage cheese plus 1 tablespoon lemon juice plus 2 tablespoons skim milk, whipped until smooth in a blender. Lower fat: 1 can chilled evaporated milk whipped with 1 teaspoon lemon juice. 1 cup plain yogurt plus 1 tablespoon cornstarch 1 cup plain nonfat yogurt Substitutes for Fats in Baking * * (HV) denoted Healthy Version for low fat or fat free substitution in Baking Butter (1 cup) 1 cup trans-free vegetable shortening 3/4 cups of vegetable oil (example. Canola oil) Fruit purees (example- applesauce, pureed prunes, baby-food fruits). Add it along with some vegetable oil and reduce any other sweeteners needed in the recipe since fruit purees are already sweet. 1 cup polyunsaturated margarine (HV) 3/4 cup polyunsaturated oil like safflower oil (HV) 1 cup mild olive oil (not extra virgin)(HV) Note: Butter creates the flakiness and the richness which an oil/purees cant provide. If you don’t want to compromise that much to taste, replace half the butter with the substitutions. Shortening(1 cup) 1 cup polyunsaturated margarine like Earth Balance or Smart Balance(HV) 1 cup + 2tbsp Butter ( better tasting than shortening but more expensive and has cholesterol and a higher level of saturated fat; makes cookies less crunchy, bread crusts more crispy) 1 cup + 2 tbsp Margarine (better tasting than shortening but more expensive; makes cookies less crunchy, bread crusts tougher) 1 Cup – 2tbsp Lard (Has cholesterol and a higher level of saturated fat) Oil equal amount of apple sauce stiffly beaten egg whites into batter equal parts mashed banana equal parts yogurt prune puree grated raw zucchini or seeds removed if cooked. Works well in quick breads/muffins/coffee cakes and does not alter taste pumpkin puree (if the recipe can handle the taste change) Low fat cottage cheese (use only half of the required fat in the recipe). Can give rubbery texture to the end result Silken Tofu – (use only half of the required fat in the recipe). Can give rubbery texture to the end result Equal parts of fruit juice Note: Fruit purees can alter the taste of the final product is used in large quantities. Cream Cheese (1 cup) 4 tbsps. margarine plus 1 cup low-fat cottage cheese – blended. Add few teaspoons of fat-free milk if needed (HV) Heavy Cream (1 cup) 1 cup evaporated skim milk (or full fat milk) 1/2 cup low fat Yogurt plus 1/2 low fat Cottage Cheese (HV) 1/2 cup Yogurt plus 1/2 Cottage Cheese Sour Cream (1 cup) 1 cup plain yogurt (HV) 3/4 cup buttermilk or plain yogurt plus 1/3 cup melted butter 1 cup crème fraiche 1 tablespoon lemon juice or vinegar plus enough whole milk to fill 1 cup (let stand 5-10 minutes) 1/2 cup low-fat cottage cheese plus 1/2 cup low-fat or nonfat yogurt (HV) 1 cup fat-free sour cream (HV) Note: How to Make Maple Syrup Substitute at home For 1 Cup Maple Syrup 1/2 cup granulated sugar 1 cup brown sugar, firmly packed 1 cup boiling water 1 teaspoon butter 1 teaspoon maple extract or vanilla extract Method In a heavy saucepan, place the granulated sugar and keep stirring until it melts and turns slightly brown. Alternatively in another pan, place brown sugar and water and bring to a boil without stirring. Now mix both the sugars and simmer in low heat until they come together as one thick syrup. Remove from heat, add butter and the extract. Use this in place of maple syrup. Store it in a fridge in an air tight container. • Using naked domain in apache, no "www" on domain in httpd.conf

  Incredibly there is no good tutorial or easy reference guide for using naked domains (no subdomain) as the primary URI online that I could find. I'm trying to configure this to happen in my httpd.conf in apache. Since I'm still a relative newb to this server stuff, trying to figure it out myself all I could do was configure some nasty redirect loops and error 400's. There's plenty of notes for the more common: http:// -- https:// and naked to -- www. and a ton of .htaccess stuff (not interested) What I want is http://www.domain.com -- http://domain.com The most helpful thing I found was this: Multiple domains (including www-"subdomain") on apache? I ended using the solution mentioned by ceejayoz in that post that some folks noted was messy and complicated because it got the desired result but I'd like to know the best practice for this in the future. I'd appreciate a nudge in the right direction. Thanks in advance.

  Tom Petrocelli of Enterprise Strategy Group published a report recently, “Oracle Social Network: The Social Glue for Enterprise Applications”, on Oracle Social Network (OSN) and how traditional social products create social silos whereas OSN is the “social glue” for enterprise applications.  This report supports the point of Oracle’s Social Business Strategy to seamless integrate social capabilities into the main business processes. Quote from report: “Oracle has adopted the correct approach to creating a social layer and socially enabled applications. Oracle Social Network is not simply another enterprise social network product; it is a complete social layer for the enterprise application stack. This approach will serve Oracle users well in the future.” OSN allow to capture the related Conversations of a business process right where it’s happens – within the respective Business application.  Fusion CRM is an excellent example for this approach.   With the release of the new Sun Ray product last week comes the advent of a different software licensing model. • Restored Domain Controller does not display any information using dcdiag command

  I am testing restoring a domain controller from system state backup to different hardware in a non production environment as a sanity check for our restoration procedure. When i run the dcdiag command I get "blank info back" and all that is displayed are two lines as follows: Domain Controller Diagnosis Performing initial setup: and then I am returned to the command prompt. Even when I do dcdiag /v i get the same result. I have double checked the DNS settings and Active Directory works properly. All FSMO roles are being held by this restored Domain Controller. I am able to join test pc's to the domain without issue etc Is this a common issue or is there something that I am missing. Thanks.

• SQL SERVER – Question to You – When to use Function and When to use Stored Procedure

  This week has been very interesting week. I have asked few questions to users and have received remarkable participation on the subject. Q1) SQL SERVER – Puzzle – SELECT * vs SELECT COUNT(*) Q2) SQL SERVER – Puzzle – Statistics are not Updated but are Created Once Keeping the same spirit up, I am asking the third question over here. Q3) When to use User Defined Function and when to use Stored Procedure in your development? Personally, I believe that they are both different things - they cannot be compared. I can say, it will be like comparing apples and oranges. Each has its own unique use. However, they can be used interchangeably at many times and in real life (i.e., production environment). I have personally seen both of these being used interchangeably many times. This is the precise reason for asking this question. When do you use Function and when do you use Stored Procedure? What are Pros and Cons of each of them when used instead of each other? If you are going to answer that ‘To avoid repeating code, you use Function’ - please think harder! Stored procedure can do the same. In SQL Server Denali, even the stored procedure can return the result just like Function in SELECT statement; so if you are going to answer with ‘Function can be used in SELECT, whereas Stored Procedure cannot be used’ - again think harder! • Using Take and skip keyword to filter records in LINQ

  In LINQ we can use the take keyword to filter out the number of records that we want to retrieve from the query. Let’s say we want to retrieve only the first 5 records for the list or array then we can use the following query     int[] numbers = { 5, 4, 1, 3, 9, 8, 6, 7, 2, 0 };     var first3Numbers = numbers.Take(3); The TAKE keyword can also be easily applied to list of object in the following way. var first3WAOrders = (         from cust in customers         from order in cust.Orders         select cust ) .Take(3); [Note in the query above we are using the order clause so that the data is first ordered based on the orders field and then the first 3 records are taken. In both the above example we have been able to filter out data based on the number of records we want to fetch. But in both the cases we were fetching the records from the very beginning. But there can be some requirements whereby we want to fetch the records after skipping some of the records like in paging. For this purpose LINQ has provided us with the skip method which skips the number of records passed as parameter in the result set. int[] numbers = { 5, 4, 1, 3, 9, 8, 6, 7, 2, 0 }; var allButFirst4Numbers = numbers.Skip(4); The SKIP keyword can also be easily applied to list of object in the following way. var first3WAOrders = (         from cust in customers         from order in cust.Orders         select cust ).Skip(3);  Vikram

• Miami 311: Built on Windows Azure

  This is a cool use of Azure. The city of Miami tool their “311” data around potholes, trash pickup issues, recycling issues, broken sidewalks and the like and put that data in Azure. The next step is that they leveraged Bing Maps and Silverlight to visualize those issues spread on a map of the city. The solution takes advantage of virtually unlimited storage and processing power, provides the ability to quickly address service requests and implement updates even during peak times such as hurricane season. If things change, the City can bring the solution on site or move to a physical facility, all based on  need and cost-effectiveness. The Microsoft Windows Azure cloud platform made it easy to do, and they used both Bing mapping and Silverlight to build a user friendly front end. According to Port25 (Miami 311: Built on Windows Azure - Port 25: The Open Source Community at Microsoft), it took two people 8 days to implement the whole system and they are going to open source their solution so that other cities can leverage it. • HUGE EF4 Inheritance Bug

  Well maybe not for everyone but for me is definitely really important. That is why I get straight into the point. We have the following model: Which maps to the following database: We are using EF4.0 and we want to load all Burgers including BurgerDetails. So we write the following query: But it fails. The error is : “The ResultType of the specified expression is not compatible with the required type. The expression ResultType is 'Transient.reference[SampleEFDBModel.Food]' but the required type is 'Transient.reference[SampleEFDBModel.Burger]'.Parameter name: arguments[0]”   So in the new version of EF there is no way to eager load data through Navigation Properties with 1-1 relationships defined in subclasses. Here is the relevant Microsoft Connect Issue. It is described through an other example but the result is the same.  Please if you think this is important vote up on Microsoft Connect.   EF 4.0 has many improvements. I am using it since v1 in large-scale projects and this version is faster,produces cleaner sql, more reliable and can be used for complicated business scenarios. That is why I believe this issue should be solved as soon as possible. I understand that release cycles are slow but I am hoping atleast for a hotfix. For a given percentile value P, PERCENTILE_DISC sorts the values of the expression in the ORDER BY clause and returns the value with the smallest CUME_DIST value (with respect to the same sort specification) that is greater than or equal to P. If you are clear with understanding of the function – no need to read further. If you got lost here is the same in simple words – it is lot like finding median with percentile value. • Mission 26 Captures Endeavour’s Last Trip in Stop Motion

  On September 21, 2012 the Space Shuttle Endeavour was delivered to the Los Angeles International Airport and spent the next three days being slowly transported 12 miles to the California Science Center. One dedicated team of photographers captured the whole thing. Lead by Matthew Givot, the group followed the shuttle for three straight days, photographing it around the clock. The Endeavor started on Thursday night and went on until Sunday night, with very little sleep to no sleep. The only thing that kept us going was pure love of the art and adrenaline. One thing that stood out the most for me, while I was shooting, was the people of Los Angeles. It was so powerful to see the excitement on peoples faces and the pride of their home town. No matter how many times I would see the Shuttle it would never get old. This has been an amazing experience that I will never forget. My hope is that this film will show you the amount of dedicated people and teamwork that it took to get the Endeavour to its new home. Enjoy. • Unable to browse Server 2008R2 from XP clinets

  We have just deployed a Windows 2008R2 server in our Windows 2003 domain. XP clinets are unable to browse in "entire network" and find the new server. It can be accessed by entering \\servername and it can be pinged by name and IP address. Users access shares without issue. Netbios over TCP/IP is enabled. Computer browser is running on the Windows 2008R2 system. Turn on Network Discovery is enabled. • How to check a digital certificate?

  I have extracted a certificate from a cable modem. Now I want to verify if this certificate is valid. If I understand correctly, the verification process consists of having the issuer sign the subject's public key and then comparing the result with the subject's signature. This signing process is done using the issuer's private key, which nobody but the issuer has access to. So even if I have both certificates on my PC, there is no way for me to verify the subject's validity. From this I can only conclude that the verification must be implemented as a remote service. The problem is that I don't know what remote service I need to access to verify this certificate. The issuer is "AVM GmbH Cable Modem Root Certificate Authority". How can I find the webservice for verification? Is there standard lookup mechanism for this?

• After restoring a SQL Server database from another server - get login fails

  Issue: After you have restored a sql server database from another server, lets say from production to a Q/A environment, you get the "Login Fails" message for your service account. Reason: User logon information is stored in the syslogins table in the master database. By changing servers, or by altering this information by rebuilding or restoring an old version of the master database, the information may be different from when the user database dump was created. If logons do not exist for the users, they will receive an error indicating "Login failed" while attempting to log on to the server. If the user logons do exist, but the SUID values (for 6.x) or SID values (for 7.0) in master..syslogins and the sysusers table in the user database differ, the users may have different permissions than expected in the user database. Solution: Links a user entry in the sys.database_principals system catalog view in the current database to a SQL Server login of the same name. If a login with the same name does not exist, one will be created. Examine the result from the Auto_Fix statement to confirm that the correct link is in fact made. Avoid using Auto_Fix in security-sensitive situations. When you use Auto_Fix, you must specify user and password if the login does not already exist, otherwise you must specify user but password will be ignored. login must be NULL. user must be a valid user in the current database. The login cannot have another user mapped to it. execute the following stored procedure, in this example the login user name is "MyUser" exec sp_change_users_login 'Auto_Fix', 'MyUser'   NOTE: sp_change_users_login cannot be used with a SQL Server login created from a Windows principal or with a user created by using CREATE USER WITHOUT LOGIN.

The next release of .NET and Visual Studio include a ton of great new features and capabilities.  With ASP.NET 4.5 you'll see a bunch of really nice improvements with both Web Forms and MVC - as well as in the core ASP.NET base foundation that both are built upon. Today’s post covers some of the work we are doing to add built-in support for bundling and minification into ASP.NET - which makes it easy to improve the performance of applications.  This feature can be used by all ASP.NET applications, including both ASP.NET MVC and ASP.NET Web Forms solutions. Basics of Bundling and Minification As more and more people use mobile devices to surf the web, it is becoming increasingly important that the websites and apps we build perform well with them. We’ve all tried loading sites on our smartphones – only to eventually give up in frustration as it loads slowly over a slow cellular network.  If your site/app loads slowly like that, you are likely losing potential customers because of bad performance.  Even with powerful desktop machines, the load time of your site and perceived performance can make an enormous customer perception. Most websites today are made up of multiple JavaScript and CSS files to separate the concerns and keep the code base tight. While this is a good practice from a coding point of view, it often has some unfortunate consequences for the overall performance of the website.  Multiple JavaScript and CSS files require multiple HTTP requests from a browser – which in turn can slow down the performance load time.  Simple Example Below I’ve opened a local website in IE9 and recorded the network traffic using IE’s built-in F12 developer tools. As shown below, the website consists of 5 CSS and 4 JavaScript files which the browser has to download. Each file is currently requested separately by the browser and returned by the server, and the process can take a significant amount of time proportional to the number of files in question. Bundling ASP.NET is adding a feature that makes it easy to “bundle” or “combine” multiple CSS and JavaScript files into fewer HTTP requests. This causes the browser to request a lot fewer files and in turn reduces the time it takes to fetch them.   Below is an updated version of the above sample that takes advantage of this new bundling functionality (making only one request for the JavaScript and one request for the CSS): The browser now has to send fewer requests to the server. The content of the individual files have been bundled/combined into the same response, but the content of the files remains the same - so the overall file size is exactly the same as before the bundling.   But notice how even on a local dev machine (where the network latency between the browser and server is minimal), the act of bundling the CSS and JavaScript files together still manages to reduce the overall page load time by almost 20%.  Over a slow network the performance improvement would be even better. Minification The next release of ASP.NET is also adding a new feature that makes it easy to reduce or “minify” the download size of the content as well.  This is a process that removes whitespace, comments and other unneeded characters from both CSS and JavaScript. The result is smaller files, which will download and load in a browser faster.  The graph below shows the performance gain we are seeing when both bundling and minification are used together: Even on my local dev box (where the network latency is minimal), we now have a 40% performance improvement from where we originally started.  On slow networks (and especially with international customers), the gains would be even more significant. Using Bundling and Minification inside ASP.NET The upcoming release of ASP.NET makes it really easy to take advantage of bundling and minification within projects and see performance gains like in the scenario above. The way it does this allows you to avoid having to run custom tools as part of your build process –  instead ASP.NET has added runtime support to perform the bundling/minification for you dynamically (caching the results to make sure perf is great).  This enables a really clean development experience and makes it super easy to start to take advantage of these new features. Let’s assume that we have a simple project that has 4 JavaScript files and 6 CSS files: Bundling and Minifying the .css files Let’s say you wanted to reference all of the stylesheets in the “Styles” folder above on a page.  Today you’d have to add multiple CSS references to get all of them – which would translate into 6 separate HTTP requests: The new bundling/minification feature now allows you to instead bundle and minify all of the .css files in the Styles folder – simply by sending a URL request to the folder (in this case “styles”) with an appended “/css” path after it.  For example:    This will cause ASP.NET to scan the directory, bundle and minify the .css files within it, and send back a single HTTP response with all of the CSS content to the browser.  You don’t need to run any tools or pre-processor to get this behavior.  This enables you to cleanly separate your CSS into separate logical .css files and maintain a very clean development experience – while not taking a performance hit at runtime for doing so.  The Visual Studio designer will also honor the new bundling/minification logic as well – so you’ll still get a WYSWIYG designer experience inside VS as well. Bundling and Minifying the JavaScript files Like the CSS approach above, if we wanted to bundle and minify all of our JavaScript into a single response we could send a URL request to the folder (in this case “scripts”) with an appended “/js” path after it:   This will cause ASP.NET to scan the directory, bundle and minify the .js files within it, and send back a single HTTP response with all of the JavaScript content to the browser.  Again – no custom tools or builds steps were required in order to get this behavior.  And it works with all browsers. Ordering of Files within a Bundle By default, when files are bundled by ASP.NET they are sorted alphabetically first, just like they are shown in Solution Explorer. Then they are automatically shifted around so that known libraries and their custom extensions such as jQuery, MooTools and Dojo are loaded before anything else. So the default order for the merged bundling of the Scripts folder as shown above will be: Jquery-1.6.2.js Jquery-ui.js Jquery.tools.js a.js By default, CSS files are also sorted alphabetically and then shifted around so that reset.css and normalize.css (if they are there) will go before any other file. So the default sorting of the bundling of the Styles folder as shown above will be: reset.css content.css forms.css globals.css menu.css styles.css The sorting is fully customizable, though, and can easily be changed to accommodate most use cases and any common naming pattern you prefer.  The goal with the out of the box experience, though, is to have smart defaults that you can just use and be successful with. Any number of directories/sub-directories supported In the example above we just had a single “Scripts” and “Styles” folder for our application.  This works for some application types (e.g. single page applications).  Often, though, you’ll want to have multiple CSS/JS bundles within your application – for example: a “common” bundle that has core JS and CSS files that all pages use, and then page specific or section specific files that are not used globally. You can use the bundling/minification support across any number of directories or sub-directories in your project – this makes it easy to structure your code so as to maximize the bunding/minification benefits.  Each directory by default can be accessed as a separate URL addressable bundle.  Bundling/Minification Extensibility ASP.NET’s bundling and minification support is built with extensibility in mind and every part of the process can be extended or replaced. Custom Rules In addition to enabling the out of the box - directory-based - bundling approach, ASP.NET also supports the ability to register custom bundles using a new programmatic API we are exposing.  The below code demonstrates how you can register a “customscript” bundle using code within an application’s Global.asax class.  The API allows you to add/remove/filter files that go into the bundle on a very granular level:     The above custom bundle can then be referenced anywhere within the application using the below <script> reference:     Custom Processing You can also override the default CSS and JavaScript bundles to support your own custom processing of the bundled files (for example: custom minification rules, support for Saas, LESS or Coffeescript syntax, etc). In the example below we are indicating that we want to replace the built-in minification transforms with a custom MyJsTransform and MyCssTransform class. They both subclass the CSS and JavaScript minifier respectively and can add extra functionality:     The end result of this extensibility is that you can plug-into the bundling/minification logic at a deep level and do some pretty cool things with it. 2 Minute Video of Bundling and Minification in Action Mads Kristensen has a great 90 second video that shows off using the new Bundling and Minification feature.  You can watch the 90 second video here. Summary The new bundling and minification support within the next release of ASP.NET will make it easier to build fast web applications.  It is really easy to use, and doesn’t require major changes to your existing dev workflow.  It is also supports a rich extensibility API that enables you to customize it however you want. You can easily take advantage of this new support within ASP.NET MVC, ASP.NET Web Forms and ASP.NET Web Pages based applications. Hope this helps, Scott P.S. • No USB 04b4:0307 mike input after 10.04

  I am using an USB phone that is in fact a so-called "sound card" based on the 04b4:0307 chip. In fact, I have two different phones using 04b4:0307 and in fact I have a sound USB key too. This, I believe, is the start of why they call 04b4:0307 "ubiquitous" (instead of oh four bee...). But not "eternal". The mike worked in Ubuntu 9.10 and 10.04 but not later ([email protected]). "not working" means that 04b4:0307 shows in Sound Preference but that its vu-meter is mute. I have posted the full lsusb and the result of tests in various systems here: http://www.papou.byethost9.com/tmp/1043601.html Note: Tests done on VirtualBox (thankfully). But UbuntUnity no longer works on VB, so I used the LinuxMint equivalent. ?hat's fate. I could not find any problem report close enough. What should be my next step? I believe the problem occurs in module snd-usb-audio. One thing I might try if I knew how is hacking a DEB with its 10.04's source. I can hack DEBs. Any hint welcome on how to make a DEB overriding a kernel packed module. I mean that the newly installed module should have precedence, be loaded instead, the module installed with the kernel. TIA !
