• I thought everyone did it like this – Training Session Code Management

  One of an occasional series of blogs about things that I do that perhaps others don’t. From very early on in my dealings with SQL Server Management Studio I started using Solutions and Projects. This means that I started using them when writing sessions and it wasn’t until speaking with someone at PASS Summit 2013 that I found out that this was a process that was unheard of by some people. So, here we go, a run through how I create and manage code and other documents that I use in presentations. For people unsure what solutions and projects are; • Solution – a container for one or more projects. • Project – a container for files, .sql files are grouped as Queries, all other files are stored as Misc. How do I start? Open Management Studio as normal, and then click File | New and select Project This will bring up the New Project dialog box and you can select/add details as necessary in the places indicated. If this is the first project you are creating then be sure to select the Create directory for solution check box (4). If know in advance that you are going to have more than one project in the solution then you may want to edit the Solution name (3) as by default it will take the name of the project that you enter at (2). This will lead you to the following folder structure (depending on the location that you chose in 3) above. In SSMS you need to turn on the Solution Explorer, either via the View menu or pressing Ctrl + Alt + L                   This will bring up a dockable window that will let you quickly access the files that you choose to include in the Solution.                     Can we get to work and write some code yet please? Yes, we can. As with many Microsoft products there are several ways to go about this, let’s look at the easiest way when creating new code. When writing a presentation I usually start from the position we are currently in – a brand new solution and project with no code. Later on we will look at incorporating existing code files into the Project where we need it. Right-click on the Project name and choose Add New Query           As soon as you click this you will be prompted to select the sql server that you want to connect to and once you have done that you will have your new query open in the text editor and the Solution Explorer will now look like this, showing your server connection and your new query.               And the Project folder will look like this         Now once you have written your code don’t press save, choose Save As and give the code a better name than QueryX.sql. SSMS will interpret this as a request to rename Query1 and your Project and the Project folder will show that SQLQuery1.sql no longer exists but there is now a file named as you requested. If you happen to click save in error then right-click the query in the project and choose rename.               You can then alter the name as you like, even when open in the SSMS text editor, and the file will be renamed. When creating a set of scripts for a presentation I name files with a numeric prefix so that when they are sorted by name they are in the order that I need to use them during the session. I love this idea but I’ve got loads of existing scripts I want to put in Projects Excellent, adding existing files to a project is easy, let’s consider that you have query files in your My Documents folder and you want to bring them into the Project we have just created. Right-click on the Project and choose Add | Existing Item           Navigate to the location of your chosen file and select it. The file will open in SSMS text editor and the Project will be updated to show that the selected query is now part of your project. If you look in Windows Explorer you will see that the query file has been copied into the Project folder, the original file still remains in your My Documents (or wherever it existed). I’ll leave it as an exercise for the reader to explore creating further Projects within a solution but will happily answer questions if you get into difficulties. What other advantages do I get from this? Well, as all your code is neatly in one Solution folder and the folder contains only files that are pertinent to the session you are presenting then it makes it very easy to share this code, simply copy the whole folder onto a USB stick, Blog, FTP location, wherever you choose and it’s all there in one self-contained parcel. You don’t have to limit yourself to .sql query files, you can add any sort of document via the Add Existing Item method, just try it out. Right-click on the protect and choose Add | Existing Item           Change the file type filter.                       You can multi select items here using Ctrl as you click each item you want. When you are done, click the Add button and the items will be brought into your project.                 Again, using this process means the files are copied into the project folder, leaving you original files untouched in their original location. Once they are here you can double click them in the SSMS Solution Explorer to open them, for files with a specific file type then the appropriate application will be launched – ie Word, Excel etc. However, if the files are something that the SSMS Text editor can display then they will open in a tab in SSMS. Try it out with a text file or even a PS1 file … This sounds excellent but what do I need to watch out for? One big thing to consider when working like this is the version of SSMS that you are using. There is something fundamentally different between the different versions in the way that the project (.ssmssqlproj) and solution (.sqlsuo and .ssmssln) files are formatted. If you create a solution in an older version of SSMS and then open it in a newer version you will be given the option to upgrade it. Once you do this upgrade then the older version of SSMS will not be able to open the solution any more. Now this ranks as more of an annoyance than disaster as the files within the projects are not affected in any way, you would just have to delete the files mentioned and recreate the solution in the older version again. Summary So, here we have seen how using SSMS Projects and Solutions can help keep related code files (and other document types) together in a neat structure so that they can be quickly navigated during a presentation and it also makes it incredibly simple to distribute your code and share it with others. I hope this is of use to you and helps you bring more order into your sql files, whether you are a person that does technical presentations or not, having your code grouped and managed can make for a lot of advantages as your code library expands.

• How To Make Hundreds of Complex Photo Edits in Seconds With Photoshop Actions

  Have a huge folder of images needing tweaks? A few hundred adjustments may seem like a big, time consuming job—but read one to see how Photoshop can do repetitive tasks automatically, even if you don’t know how to program! Photoshop Actions are a simple way to program simple routines in Photoshop, and are a great time saver, allowing you to re-perform tasks over and over, saving you minutes or hours, depending on the job you have to work on. See how any bunch of images and even some fairly complicated photo tweaking can be done automatically to even hundreds of images at once. When Can I use Photoshop Actions? Photoshop actions are a way of recording the tools, menus, and keys pressed while using the program. Each time you use a tool, adjust a color, or use the brush, it can be recorded and played back over any file Photoshop can open. While it isn’t perfect and can get very confused if not set up correctly, it can automate editing hundreds of images, saving you hours and hours if you have big jobs with complex edits. The image illustrated above is a template for a polaroid-style picture frame. If you had several hundred images, it would actually be a simple matter to use Photoshop Actions to create hundreds of new images inside the frame in almost no time at all. Let’s take a look at how a simple folder of images and some Image editing automation can turn lots of work into a simple and easy job. Creating a New Action Actions is a default part of the “Essentials” panel set Photoshop begins with as a default. If you can’t see the panel button under the “History” button, you can find Actions by going to Window > Actions or pressing Alt + F9. Click the in the Actions Panel, pictured in the previous illustration on the left. Choose to create a “New Set” in order to begin creating your own custom Actions. Name your action set whatever you want. Names are not relevant, you’ll simply want to make it obvious that you have created it. Click OK. Look back in the layers panel. You’ll see your new Set of actions has been added to the list. Click it to highlight it before going on. Click the again to create a “New Action” in your new set. If you care to name your action, go ahead. Name it after whatever it is you’re hoping to do—change the canvas size, tint all your pictures blue, send your image to the printer in high quality, or run multiple filters on images. The name is for your own usage, so do what suits you best. Note that you can simplify your process by creating shortcut keys for your actions. If you plan to do hundreds of edits with your actions, this might be a good idea. If you plan to record an action to use every time you use Photoshop, this might even be an invaluable step. When you create a new Action, Photoshop automatically begins recording everything you do. It does not record the time in between steps, but rather only the data from each step. So take your time when recording and make sure you create your actions the way you want them. The square button stops recording, and the circle button starts recording again. With these basics ready, we can take a look at a sample Action. Recording a Sample Action Photoshop will remember everything you input into it when it is recording, even specific photographs you open. So begin recording your action when your first photo is already open. Once your first image is open, click the record button. If you’re already recording, continue on. Using the File > Place command to insert the polaroid image can be easier for Actions to deal with. Photoshop can record with multiple open files, but it often gets confused when you try it. Keep your recordings as simple as possible to ensure your success. When the image is placed in, simply press enter to render it. Select your background layer in your layers panel. Your recording should be following along with no trouble. Double click this layer. Double clicking your background layer will create a new layer from it. Allow it to be renamed “Layer 0” and press OK. Move the “polaroid” layer to the bottom by selecting it and dragging it down below “Layer 0” in the layers panel. Right click “Layer 0” and select “Create Clipping Mask.” The JPG image is cropped to the layer below it. Coincidentally, all actions described here are being recorded perfectly, and are reproducible. Cursor actions, like the eraser, brush, or bucket fill don’t record well, because the computer uses your mouse movements and coordinates, which may need to change from photo to photo. Click the to set your Photograph layer to a “Screen” blending mode. This will make the image disappear when it runs over the white parts of the polaroid image. With your image layer (Layer 0) still selected, navigate to Edit > Transform > Scale. You can use the mouse to resize your Layer 0, but Actions work better with absolute numbers. Visit the Width and Height adjustments in the top options panel. Click the chain icon to link them together, and adjust them numerically. Depending on your needs, you may need to use more or less than 30%. Your image will resize to your specifications. Press enter to render, or click the check box in the top right of your application. + Click on your bottom layer, or “polaroid” in this case. This creates a selection of the bottom layer. Navigate to Image > Crop in order to crop down to your bottom layer selection Your image is now resized to your bottommost layer, and Photoshop is still recording to that effect. For additional effect, we can navigate to Image > Image Rotation > Arbitrary to rotate our image by a small tilt. Choosing 3 degrees clockwise , we click OK to render our choice. Our image is rotated, and this step is recorded. Photoshop will even record when you save your files. With your recording still going, find File > Save As. You can easily tell Photoshop to save in a new folder, other than the one you have been working in, so that your files aren’t overwritten. Navigate to any folder you wish, but do not change the filename. If you change the filename, Photoshop will record that name, and save all your images under whatever you type. However, you can change your filetype without recording an absolute filename. Use the pulldown tab and select a different filetype—in this instance, PNG. Simply click “Save” to create a new PNG based on your actions. Photoshop will record the destination and the change in filetype. If you didn’t edit the name of your file, it will always use the variable filename of any image you open. (This is very important if you want to edit hundreds of images at once!) Click File > Close or the red “X” in the corner to close your filetype. Photoshop can record that as well. Since we have already saved our image as a JPG, click “NO” to not overwrite your original image. Photoshop will also record your choice of “NO” for subsequent images. In your Actions panel, click the stop button to complete your action. You can always click the record button to add more steps later, if you want. This is how your new action looks with its steps expanded. Curious how to put it into effect? Read on to see how simple it is to use that recording you just made. Editing Lots of Images with Your New Action Open a large number of images—as many as you care to work with. Your action should work immediately with every image on screen, although you may have to test and re-record, depending on how you did. Actions don’t require any programming knowledge, but often can get confused or work in a counter-intuitive way. Record your action until it is perfect. If it works once without errors, it’s likely to work again and again! Find the “Play” button in your Actions Panel. With your custom action selected, click “Play” and your routine will edit, save, and close each file for you. Keep bashing “Play” for each open file, and it will keep saving and creating new files until you run out of work you need to do. And in mere moments, a complicated stack of work is done. Photoshop actions can be very complicated, far beyond what is illustrated here, and can even be combined with scripts and other actions, creating automated creation of potentially very complex files, or applying filters to an entire portfolio of digital photos. Sorry for not giving a positive comment here but, please your IDM suite is very good and, you simply aren't promoting it well enough” So I decided to send Jaime a note asking him about his experience, and to get his perspective on what makes the Oracle products great. What I found out is that Jaime is a very experienced IDM Architect with several major projects under his belt. Darin Pendergraft: Can you tell me a bit about your experience? How long have you worked in IT, and what is your IDM experience? Jaime Cardoso: I started working in "serious" IT in 1998 when I became Netscape's technical specialist in Portugal. Netscape Portugal didn't exist so, I was working for their VAR here. Most of my work at the time was with Netscape's mail server and LDAP server. Since that time I've been bouncing between the system's side like Sun resellers, Solaris stuff and even worked with Sun's Engineering in the making of an Hierarchical Storage Product (Sun CIS if you know it) and the application's side, mostly in LDAP and IDM. Over the years I've been doing support, service delivery and pre-sales / architecture design of IDM solutions in most big customers in Portugal, to name a few projects: - The first European deployment of Sun Access Manager (SAPO – Portugal Telecom) - The identity repository of 5/5 of the Biggest Portuguese banks - The Portuguese government federation of services project DP: OK, in your blog response, you mentioned 3 topics: 1. Using Oracle's standards based architecture; (you) were able to integrate any new system in days: can you give an example? What systems, how long did it take, number of apps/users/accounts/roles etc. JC: It's relatively easy to design a user management strategy for a static environment, or if you simply assume that you're an <insert vendor here> shop and all your systems will bow to that vendor's will. We've all seen that path, the use of proprietary technologies in interoperability solutions but, then reality kicks in. As an ISP I recall that I made the technical decision to use Active Directory as a central authentication system for the entire IT infrastructure. Clients, systems, apps, everything was there. As a good part of the systems and apps were running on UNIX, then a connector became needed in order to have UNIX boxes to authenticate against AD. And, that strategy worked but, each new machine required the component to be installed, monitoring had to be made for that component and each new app had to be independently certified. A self care user portal was an ongoing project, AD access assumes the client is inside the domain, something the ISP's customers (and UNIX boxes) weren't nor had any intention of ever being. When the Windows 2008 rollout was done, Microsoft changed the Active Directory interface. The Windows administrators didn't have enough know-how about directories and the way systems outside the MS world behaved so, on the go live, things weren't properly tested and a general outage followed. Several hours and 1 roll back later, everything was back working. But, the ISP still had to change all of its applications to work with the new access methods and reset the effort spent on the self service user portal. To keep with the same strategy, they would also have to trust Microsoft not to change interfaces again. Simply by putting up an Oracle LDAP server in the middle and replicating the user info from the AD into LDAP, most of the problems went away. Even systems for which no AD connector existed had PAM in them so, integration was made at the OS level, fully supported by the OS supplier. Sun Identity Manager already had a self care portal, combined with a user workflow so, all the clearances had to be given before the account was created or updated. Adding a new system as a client for these authentication services was simply a new checkbox in the OS installer and, even True64 systems were, for the first time integrated also with a 5 minute work of a junior system admin. True, all the windows clients and MS apps still went to the AD for their authentication needs so, from the start everybody knew that they weren't 100% free of migration pains but, now they had a single point of problems to look at. If you're looking for numbers: - 500K directory entries (users) - 2-300 systems After the initial setup, I personally integrated about 20 systems / apps against LDAP in 1 day while being watched by the different IT teams. The internal IT staff did the rest. DP: 2. Using Federation allows the business to keep options open for buying and selling companies, and yet maintain a single view for both employee and customer. What do you mean by this? Can you give an example? JC: The market is dynamic. The company that's being bought today tomorrow will be sold again. Companies that spread on different markets may see the regulator forcing a sale of part of a company due to monopoly reasons and companies that are in multiple countries have to comply with different legislations. Our job, as IT architects, while addressing the customers and employees authentication services, is quite hard and, quite contrary. On one hand, we need to give access to all of our employees to the relevant systems, apps and resources and, we already have marketing talking with us trying to find out who's a customer of the bough company but not from ours to address. On the other hand, we have to do that and keep in mind we may have to break up all that effort and that different countries legislation may became a problem with a full integration plan. That's a job for user Federation. you don't want to be the one who's telling your President that he will sell that business unit without it's customer's database (making the deal worth a lot less) or that the buyer will take with him a copy of your entire customer's database. Federation enables you to start controlling permissions to users outside of your traditional authentication realm. So what if the people of that company you just bought are keeping their old logins? Do you want, because of that, to have a dedicated system for their expenses reports? And do you want to keep their sales (and pre-sales) people out of the loop in terms of your group's path? Control the information flow, establish a Federation trust circle and give access to your apps to users that haven't (yet?) been brought into your internal login systems. You can still see your users in a unified view, you obviously control if a user has access to any particular application, either that user is in your local database or stored in a directory on the other side of the world. DP: 3. Cut response times of audit and security teams to 1/10. Is this a real number? Can you give an example? JC: No, I don't have any backing for this number. One of the companies I did system Administration for has a SOX compliance policy in place (I remind you that I live in Portugal so, this definition of SOX may be somewhat different from what you're used to) and, every time the audit team says they'll do another audit, we have to negotiate with them the size of the sample and we spend about 15 man/days gathering all the required info they ask. I did some work with Sun's Identity auditor and, from what I've been seeing, Oracle's product is even better and, I've seen that most of the information they ask would have been provided in a few hours with the help of this tool. I do stand by what I said here but, to be honest, someone from Identity Auditor team would do a much better job than me explaining this time savings. Jaime is right: the Oracle IDM products have a lot of business value, and Oracle IT is using them for a lot more than I was able to cover in the short podcast that I posted. Mark focused on big data analytics and the changing consumer expectations. Especially real-time insight is a key theme for Oracle overall and data integration products. In Mark Hurd's keynote we heard from key customers, such as Airbus and Thomson Reuters, how real-time analysis of operational data including machine data creates value, in some cases even saves lives. Thomas Kurian gave a deeper look into Oracle's big data and fast data solutions. In the initial lead Data Integration track session - Brad Adelberg, VP of Development, presented Oracle’s Data Integration 12c product strategy based on key trends from the initial OpenWorld keynotes. Brad talked about how Oracle's data integration products address the new data integration requirements that evolved with cloud computing, big data, and changing consumer expectations and how they set the key themes in our products’ road map. Brad explained why and how fast-time to value, high-performance and future-ready solutions is the top focus areas for product development. Another good session was delivered by long-time GoldenGate users, Comcast.  Jason Hurd and Amit Patel of Comcast talked about the various use cases they deploy Oracle GoldenGate throughout their enterprise, from database upgrades, feeding reporting systems, to active-active database synchronization.  The Comcast team shared many good tips on how to use GoldenGate for both zero downtime upgrades and active-active replication with conflict management requirement. One of our other important goals we had this year for the Data Integration track at OpenWorld was hearing from our customers. We ended day 1 on just that, with a wonderful award ceremony for Oracle Excellence Awards for Oracle Fusion Middleware Innovation. The ceremony was held in the Yerba Buena Center for the Arts.   Java Runtime Environment 7u60 (a.k.a. JRE 7u60-b19) and later updates on the JRE 7 codeline are now certified with Oracle E-Business Suite Release 11i and 12.0, 12.1, and 12.2 for Windows-based desktop clients. Effects of new support dates on Java upgrades for EBS environments Support dates for the E-Business Suite and Java have changed.  Please review the sections below for more details: What does this mean for Oracle E-Business Suite users? Will EBS users be forced to upgrade to JRE 7 for Windows desktop clients? Will EBS users be forced to upgrade to JDK 7 for EBS application tier servers? All JRE 6 and 7 releases are certified with EBS upon release Our standard policy is that all E-Business Suite customers can apply all JRE updates to end-user desktops from JRE 1.6.0_03 and later updates on the 1.6 codeline, and from JRE 7u10 and later updates on the JRE 7 codeline.  We test all new JRE 1.6 and JRE 7 releases in parallel with the JRE development process, so all new JRE 1.6 and 7 releases are considered certified with the E-Business Suite on the same day that they're released by our Java team.  You do not need to wait for a certification announcement before applying new JRE 1.6 or JRE 7 releases to your EBS users' desktops. What's new in JRE 1.7.0_60? JDK 7u60 contains IANA time zone data version 2014b. For more information, refer to Timezone Data Versions in the JRE Software. No need to worry -- it's fixed.  To recap: JRE releases 1.6.0_18 through 1.6.0_22 had issues with mismanaging session cookies that affected some users in some circumstances. The fix for those issues was first included in JRE 1.6.0_23. These fixes will carry forward and continue to be fixed in all future JRE releases on the JRE 6 and 7 codelines.  In other words, if you wish to avoid the mismanaged session cookie issue, you should apply any release after JRE 1.6.0_22 on the JRE 6 codeline, and JRE 7u10 and later JRE 7 codeline updates. Implications of Java 6 End of Public Updates for EBS Users The Support Roadmap for Oracle Java is published here: Oracle Java SE Support Roadmap The latest updates to that page (as of Sept. 19, 2012) state (emphasis added): Java SE 6 End of Public Updates Notice After February 2013, Oracle will no longer post updates of Java SE 6 to its public download sites. Existing Java SE 6 downloads already posted as of February 2013 will remain accessible in the Java Archive on Oracle Technology Network. Developers and end-users are encouraged to update to more recent Java SE versions that remain available for public download. For enterprise customers, who need continued access to critical bug fixes and security fixes as well as general maintenance for Java SE 6 or older versions, long term support is available through Oracle Java SE Support . What does this mean for Oracle E-Business Suite users? EBS users fall under the category of "enterprise users" above.  Java is an integral part of the Oracle E-Business Suite technology stack, so EBS users will continue to receive Java SE 6 updates from February 2013 to the end of Java SE 6 Extended Support in June 2017. In other words, nothing changes for EBS users after February 2013.  EBS users will continue to receive critical bug fixes and security fixes as well as general maintenance for Java SE 6 until the end of Java SE 6 Extended Support in June 2017. How can EBS customers obtain Java 6 updates after the public end-of-life? EBS customers can download Java 6 patches from My Oracle Support.  For a complete list of all Java SE patch numbers, see: All Java SE Downloads on MOS (Note 1439822.1) Both JDK and JRE packages are contained in a single combined download after 6u45.  Download the "JDK" package for both the desktop client JRE and the server-side JDK package.  Will EBS users be forced to upgrade to JRE 7 for Windows desktop clients? This upgrade is highly recommended but remains optional while Java 6 is covered by Extended Support. Updates will be delivered via My Oracle Support, where you can continue to receive critical bug fixes and security fixes as well as general maintenance for JRE 6 desktop clients.  Java 6 is covered by Extended Support until June 2017.  All E-Business Suite customers must upgrade to JRE 7 by June 2017. Coexistence of JRE 6 and JRE 7 on Windows desktops The upgrade to JRE 7 is highly recommended for EBS users, but some users may need to run both JRE 6 and 7 on their Windows desktops for reasons unrelated to the E-Business Suite. Most EBS configurations with IE and Firefox use non-static versioning by default. JRE 7 will be invoked instead of JRE 6 if both are installed on a Windows desktop. For more details, see "Appendix B: Static vs. Non-static Versioning and Set Up Options" in Notes 290807.1 and 393931.1. Applying Updates to JRE 6 and JRE 7 to Windows desktops Auto-update will keep JRE 7 up-to-date for Windows users with JRE 7 installed. Auto-update will only keep JRE 7 up-to-date for Windows users with both JRE 6 and 7 installed.  JRE 6 users are strongly encouraged to apply the latest Critical Patch Updates as soon as possible after each release. • Our winners- and some BBQ for everyone

  Congrats to our two winners for the first two comments on my last entry. Steve from Australia and John Lemon. Steve won since he was the first person over the International Date Line to see the post I made so late after a workday on Friday. So not only does he get to live in a country with the 2nd most beautiful women in the world, but now he gets some cool Oracle Swag, too. (Yes, I live on the beach in southern California, so you can guess where 1st place is for that other contest…Now if Steve happens to live in Manly, we may actually have a tie going…) OK, ok, for everyone else, you can be winners, too. How you ask? I will make you the envy of every guy and gal in your neighborhood or campsite. What follows is the way to smoke the best ribs you or anyone you know have ever tasted. Follow my instructions and give it a try. People at your party/cookout/campsite will tell you that they’re the best ribs they’ve ever had, and I will let you take all the credit. Yes, I fully realize this post is going to be longer than any post I’ve done yet. But let’s get serious here. Smoking meat is much more important, agreed? J In all honesty, this is a repeat of another blog I did, so I’m just copying and pasting. Step 1. Get some ribs. I actually really like Costco’s pack. They have both St. Louis and Baby Back. (They are the same ribs, but cut in half down the sides. St. Louis style is the ‘front’ of the ribs closest to the stomach, and ‘Baby back’ is the part of the ribs where is connects to the backbone). I like them both, so here you see I got one pack of each. About 4 racks to a pack. So these two packs for $25 each will feed about 16-20 of my guests. So around 3 bucks a person is a pretty good deal for the best ribs you’ll ever have. Step 2. Prep the ribs the night before you’re going to smoke. You need to trim them to fit your smoker racks, and also take off the membrane and add your rub. Then cover and set in fridge overnight. Here’s how to take off the membrane, which will not break down with heat and smoke like the rest of the meat, so must be removed. Use a butter knife to work in a ways between the membrane and the white bone. Just enough to make room for your finger. Try really hard not to poke through the membrane, you want to keep it whole. See how my gloved fingers can now start to lift up and pull off the membrane? This is what you are trying to do. It’s awesome when the whole thing can come off at once. This one is going great, maybe the best one I’ve ever done. Sometime, it falls apart and doesn't come off in one nice piece. I hate when that happens. Now, add your rub and pat it down once into the meat with your other hand. My rub is not secret. I got it from my mentor, a BBQ competitive chef who is currently ranked #1 in California and #3 in the nation on the BBQ circuit. He does full-day classes in southern California if anyone is interested in taking his class. Go to www.slapyodaddybbq.com to check him out. I tweaked his run recipe a tad and made my own. It’s one part Lawry’s, one part sugar, one part Montreal Steak Seasoning, one part garlic powder, one-half part red chili powder, one-half part paprika, and then 1/20th part cayenne. You can adjust that last ingredient, or leave it out. Real cheap stuff you can get at Costco. This lets you make enough rub to last about a year or two. Don’t make it all at once, make a shaker’s worth and use it up before you make more. Place it all in a bowl, mix well, and then add to a shaker like you see here. You can get a shaker with medium sized holes on it at any restaurant supply store or Smart & Final. The kind you see at pizza places for their red pepper flakes works best. Now cover and place in fridge overnight. Step 3. The next day. Ok, I’m ready to go. Get your stuff together. You will need your smoker, some good foil, a can of peach nectar, a bottle of Agave syrup, and a package of brown sugar. You will need this stuff later. I also use a clean spray bottle, and apple juice. Step 4. Make your fire, or turn on your electric smoker. In this example I’m using my portable charcoal smoker. I got this for only $40. I then modified it to be useful. Once modified, these guys actually work very well. Trust me, your food DOES NOT KNOW how expensive your smoker is. Someone who tells you that you need to spend a bunch of money on a smoker is an idiot. I also have an electric smoker that stays in my backyard. It’s cleaner and larger so I can smoke more food. But this little $40 one works great for going camping. Here is what my fire-bowl looks like. I leave a space in the middle open, and place cold charcoal and wood chucks in a circle going outwards. This makes it so when I dump the hot coals down the middle, they will slowly burn outwards, hitting different wood chucks at different times, allowing me to go 4-5 hours without having to even touch my fire. For ribs, I use apple and pecan wood. Pecan works for anything. Apple or any fruit wood is excellent for pork. So now I make my hot charcoal with a chimney only about half-full. I found a great use for that side-burner on my grill that I never use. It makes a fantastic chimney starter. You never use fluids of any kind, nor ever use that stupid charcoal that has lighter fluid built into it. Never, ever, ever. Step 5. Smoke. Add your ribs in the racks and stack them up in your smoker. I have a digital thermometer on a probe that I use to keep track of the temp in the smoker. I just lay the probe on the top rack and shut the lid. This cheap guy is a little harder to maintain the right temperature of around 225 F, so I do have to keep my eye on it more than my electric one or a more expensive charcoal one with the cool gadgets that regulate your temp for you. Every hour, spray apple juice all over your ribs using that spray bottle. After about 3 hours, you should have a very good crust (called the Bark) on your ribs. Once you have the Bark where you want it, carefully remove your ribs and place them in a tray. We are now ready for a very important part to make the flavor. Get a large piece of foil and place one rib section on it. Splash some of the peach nectar on it, and then a drizzle of the Agave syrup. Then, use your gloved hand to pack on some brown sugar. Do this on BOTH sides, and then completely wrap it up TIGHT in the foil. Do this for each rib section, and then place all the wrapped sections back into the smoker for another 4 to 6 hours. This is where the meat will get tender and flavorful. The first three hours is only to make the smoke bark. You don’t need smoke anymore, since the ribs are wrapped, you only need to keep the heat around 225 for the next 4-6 hours. Obviously you don’t spray anymore. Just time and slow heat. Be patient. It’s actually really hard to overdo it. You can let them go longer, and all that will happen is they will get even MORE tender!!! If you take them out too soon, they will be tough. How do you know? Take out one package (use long tongs) and open it up. If you grab a bone with your tongs and it just falls apart and breaks away from the rest of the meat, you are done!!! Enjoy!!! Step 6. Eat. It pulls apart like this when it’s done. By the way, smoking tri-tip is way easier. Just rub it with the same rub, and put in your smoker for about 2.5 hours at 250 F. That’s it. Low-maintenance.
