  • Ingredient Substitutes while Baking

    In our normal cooking, we substitute the vegetables for the gravies we prepare. When we start baking, we look for a good recipe. At least one or two ingredient will be missing. We do not know where to substitute what to bring same output. So we finally drop the plan of baking. Again after a month, we get the interest in baking. Again one or two lack of ingredient and that’s it. We keep on doing this for months. When I was going through the cooking blogs, I came across a site with the Ingredient Substitutes for Baking: (*) is to indicate that this substitution is ideal from personal experience. When using the substitutions that include liquid, reduce other liquid in recipe accordingly Baking Soda(1 tsp) 3 tsp Baking Powder ( and reduce the acidic ingredients in the recipe. Ex Instead of buttermilk add milk) 1 tsp potassium bicarbonate Ideal substitution – 2 tsp Baking powder and omit salt in recipe Cream of tartar (1 tsp) 1 teaspoon white vinegar 1 tsp lemon juice Notes from What’s Cooking America – If cream of tartar is used along with baking soda in a cake or cookie recipe, omit both and use baking powder instead. If it calls for baking soda and cream of tarter, just use baking powder.Normally, when cream of tartar is used in a cookie, it is used together with baking soda. The two of them combined work like double-acting baking powder. When substituting for cream of tartar, you must also substitute for the baking soda. If your recipe calls for baking soda and cream of tarter, just use baking powder. One teaspoon baking powder is equivalent to 1/4 teaspoon baking soda plus 5/8 teaspoon cream of tartar. If there is additional baking soda that does not fit into the equation, simply add it to the batter. Lower fat: 1 can chilled evaporated milk whipped with 1 teaspoon lemon juice. 1 cup plain yogurt plus 1 tablespoon cornstarch 1 cup plain nonfat yogurt Substitutes for Fats in Baking * * (HV) denoted Healthy Version for low fat or fat free substitution in Baking Butter (1 cup) 1 cup trans-free vegetable shortening 3/4 cups of vegetable oil (example. Canola oil) Fruit purees (example- applesauce, pureed prunes, baby-food fruits). Add it along with some vegetable oil and reduce any other sweeteners needed in the recipe since fruit purees are already sweet. 1 cup polyunsaturated margarine (HV) 3/4 cup polyunsaturated oil like safflower oil (HV) 1 cup mild olive oil (not extra virgin)(HV) Note: Butter creates the flakiness and the richness which an oil/purees cant provide. If you don’t want to compromise that much to taste, replace half the butter with the substitutions. Shortening(1 cup) 1 cup polyunsaturated margarine like Earth Balance or Smart Balance(HV) 1 cup + 2tbsp Butter ( better tasting than shortening but more expensive and has cholesterol and a higher level of saturated fat; makes cookies less crunchy, bread crusts more crispy) 1 cup + 2 tbsp Margarine (better tasting than shortening but more expensive; makes cookies less crunchy, bread crusts tougher) 1 Cup – 2tbsp Lard (Has cholesterol and a higher level of saturated fat) Oil equal amount of apple sauce stiffly beaten egg whites into batter equal parts mashed banana equal parts yogurt prune puree grated raw zucchini or seeds removed if cooked. Works well in quick breads/muffins/coffee cakes and does not alter taste pumpkin puree (if the recipe can handle the taste change) Low fat cottage cheese (use only half of the required fat in the recipe). Can give rubbery texture to the end result Silken Tofu – (use only half of the required fat in the recipe). Can give rubbery texture to the end result Equal parts of fruit juice Note: Fruit purees can alter the taste of the final product is used in large quantities. Cream Cheese (1 cup) 4 tbsps. margarine plus 1 cup low-fat cottage cheese – blended. Add few teaspoons of fat-free milk if needed (HV) Heavy Cream (1 cup) 1 cup evaporated skim milk (or full fat milk) 1/2 cup low fat Yogurt plus 1/2 low fat Cottage Cheese (HV) 1/2 cup Yogurt plus 1/2 Cottage Cheese Sour Cream (1 cup) 1 cup plain yogurt (HV) 3/4 cup buttermilk or plain yogurt plus 1/3 cup melted butter 1 cup crème fraiche 1 tablespoon lemon juice or vinegar plus enough whole milk to fill 1 cup (let stand 5-10 minutes) 1/2 cup low-fat cottage cheese plus 1/2 cup low-fat or nonfat yogurt (HV) 1 cup fat-free sour cream (HV) Note: How to Make Maple Syrup Substitute at home For 1 Cup Maple Syrup 1/2 cup granulated sugar 1 cup brown sugar, firmly packed 1 cup boiling water 1 teaspoon butter 1 teaspoon maple extract or vanilla extract Method In a heavy saucepan, place the granulated sugar and keep stirring until it melts and turns slightly brown. Alternatively in another pan, place brown sugar and water and bring to a boil without stirring. Now mix both the sugars and simmer in low heat until they come together as one thick syrup. Remove from heat, add butter and the extract. Use this in place of maple syrup. Store it in a fridge in an air tight container.     I want to use Blender as my level designer tool for an XNA game.   • Use depth bias for shadows in deferred shading

    We are building a deferred shading engine and we have a problem with shadows. To add shadows we use two maps: the first one stores the depth of the scene captured by the player's camera and the second one stores the depth of the scene captured by the light's camera. We then ran a shader that analyzes the two maps and outputs the third one with the ready shadow areas for the current frame. The problem we face is a classic one: Self-Shadowing: A standard way to solve this is to use the slope-scale depth bias and depth offsets, however as we are doing things in a deferred way we cannot employ this algorithm. Any attempts to set depth bias when capturing light's view depth produced no or unsatisfying results. So here is my question: MSDN article has a convoluted explanation of the slope-scale: bias = (m × SlopeScaleDepthBias) + DepthBias Where m is the maximum depth slope of the triangle being rendered, defined as: m = max( abs(delta z / delta x), abs(delta z / delta y) ) Could you explain how I can implement this algorithm manually in a shader? Maybe there are better ways to fix this problem for deferred shadows?

  • How do you author HDR content?

    How do you make it easy for your artists to author content for an HDR renderer? What kinds of tools should you provide, and what workflows need to change, in going from LDR to HDR? Note that I'm not asking about the technical aspects of implementing an HDR renderer, but about best practices for creating materials and lighting in HDR. I've googled around a bit, but there doesn't seem to be much about this topic on the web. Can anyone point me to some good resources on this, or share their own experiences? Some specific points: Lighting - how can lighting artists pick HDR light colors? Do they have a standard LDR color picker and then a multiplier? Is the multiplier in gamma or linear space? Maybe instead of a multiplier it's a log-luminance? Or a physical brightness level, like the number of lumens? How will they know what multiplier/luminance/brightness is "correct" for a given light? Materials - how can texture artists make emissive color maps, such as neon signs, TV screens, skyboxes, etc? Can you paint one as a regular LDR (8-bit-per-channel) image and apply a multiplier (or log-luminance, etc.)? Are there cases where it's necessary to actually paint HDR images? If so, how do you go about this in Photoshop (or other software)?

  • Black Screen after Resume from Sleep (Kubuntu)

    I know there is a lot of other posts like this, but I have been looking for hours and I still haven't found any solution. I have recently installed Kubuntu Linux along side my Windows 7, the sleep on my Win7 works fine and resumes like normal. When I am loaded into Kubuntu, and I put my laptop to sleep, it goes into sleep as normal. When I go to RESUME from the sleep, the screen stays solid black, it doesn't light up, no blinking curser or anything. The Wi-Fi light is 'off' (orange) and I cannot turn it on. The Caps lock and the Num lock lights on the keyboard blink slowly. I hear something on the inside of the computer start to spin. I am not very experienced with Kubuntu/Linux, but I do know a bunch of computer terminology, I am still far from an expert though. I have about 300GB designated to my Win7 stuff, and another partition with about 100GB for my Kubuntu Linux. My computers specs are as follows: Windows 7 64-bit I have the most recent version of Kubuntu because I just downloaded it a few days ago and updated it yesterday. AMD Athlon Duel-Core processor 4GB of RAM And it is a HP G61 Laptop

  • A bounce-rate attack to manipulate SEO ?

    This is a question to experienced people that might help us shed some light on the issue. We noticed a very strange behavior on our site, in Google Analytics. Some dude from Finland, namely, from Kouvola city is hitting one of our pages - only one page on our site, 'bout a hundred times per day, all with an average bounce rate of 90%+... This is causing our overall bounce rate to go up by 1 to 3% per day... which is very disturbing.. since we're trying to do our best in order to keep it as low as possible. And obviously having it jumped from ~24% to 27%, just because of that crazy dude is not making us happy at all... We tried implementing a geo-targeted script in order to catch this particular visitor and deliver him a juicy message, and it seemed like it helped in the beginning, it has stopped for a day or two, but now he's back... The geo-targeted script was also logging all IP addresses for page requests originating from Finland in order to find out more details and (in order to block them on the server level, later).. but thing is, it was all mainly cable or DSL connections with various, but not constantly repeating IPs... we are all wondering what is he up to really ? I think that this page should be kept updated with ideas on how to combat this and perhaps someone could also shed light on what it might be ? What is the reason for doing this "bounce-rate attack", as I call it?   • JOGL hardware based shadow mapping - computing the texture matrix

    I am implementing hardware shadow mapping as described here. I've rendered the scene successfully from the light POV, and loaded the depth buffer of the scene into a texture. This texture has correctly been loaded - I check this by rendering a small thumbnail, as you can see in the screenshot below, upper left corner. The depth of the scene appears to be correct - objects further away are darker, and that are closer to the light are lighter. However, I run into trouble while rendering the scene from the camera's point of view using the depth texture - the texture on the polygons in the scene is rendered in a weird, nondeterministic fashion, as shown in the screenshot. I believe I am making an error while computing the texture transformation matrix, but I am unsure where exactly.   • Blank screen after Switch User or Resume

    About half the time when I switch users or resume from standby or resume the screen goes blank (black). If I work the cursor keys I can hear the system bell when it gets to the end of the user list. I can also successfully login, going from memory, but screen stays black. Sometimes closing and re-opening the lid will light up the screen again. Pressing the special Function key to enable/disable external monitor connection has no effect [Fn]-[F5],[Fn]-[F6]. If none of the previous work I need to put the computer into hibernation or full power off to restore screen function. If I watch closely when switching users I think I can see the screen initially start to light up and then quickly fade to black. The computer is an Acer Aspire 3500, model ZL6, running Ubuntu 10.10 installed 2 days ago. No proprietary drivers are in use. I'll provide a list of hardware details as soon as I can figure out how to generate that (didn't there used to be an entry for hardware details under the System menu?). Possibly related questions: No resume after Hibernate or Standby When I resume from suspension - the screen is blank Switch user fails to complete successfully For what it's worth, blank after resume also used to happen occasionally when the laptop was running XP-Home, but nowhere near as often, perhaps 6 or 8 times a year. UPDATE: I found System Administration System Testing and ran the Monitor test. It went very very dark, but the window elements could be discerned, and the whole screen flashed (from very very dark to black). On the third repeat of that same test the screen went to full blaupck and stayed there. Moving the mouse, via touchpad, or touch keys did not wake it up again. I had to close the lid and put the computer into hibernate, and press the power button to restore it.   • Can windows XP be better than any Ubuntu (and Linux) distro for an old PC?

    The old laptop is a Toshiba 1800-100: CPU: Intel Celeron 800h Ram 128 MB (works ok) HDD: 15GB (works ok) Graphics adapter: Integrated 64-bit AGP graphics accelerator, BitBIT, 3D graphic acceleration, 8 MB Video RAM Only WindowsXP is installed, and works ok: it can be used, but it is slow (and hateful). I thought that I could improve performance (and its look) easily, since it is an old PC (drivers and everything known for years...) by installing a light Linux distro. So, I decided to install a light or customized Ubuntu distro, or Ubuntu/Debian derivative, but haven't been successful with any; not even booting LiveCDs: not even AntiX, not even Puppy. Lubuntu wiki says that it won't work because the last to releases need more ram (and some blogs say much more cpu -even core duo for new Lubuntu!-), let alone Xubuntu. The problems I have faced are: 1.There are thousands of pages talking about the same 10/15 lightweight distros, and saying more or less the same things, but NONE talks about a simple thing as to how should the RAM/swap-partition proportion be for this kind of installations. NONE! 2.Loading the LiveCD I have tried several different boot options (don't understand much about this and there's ALWAYS a line of explanation missing) and never receive error messages. Booting just stops at different stages but often seems to stop just when the X server is going to start. I am able to boot to command line. 3.I ignore whether the problem is ram size or a problem with the graphics driver (which surprises me because it is a well known brand and line of computers). So I don't know if doing a partition with a swap partition would help booting the LiveCD. 4.I would like to try the graphical interface with the LiveCD before installing. If doing the swap partition for this purpose would help. How can I do the partition? I tried to use Boot Rescue CD, but it advises me against continuing forward. I would appreciate any ideas as regards these questions. Thank you

  • Why does my system use so much cache?

    Previously, on my desktop computer running Ubuntu 14.04, I had 4GB RAM, which I thought should be plenty. However, after being on for a while, my computer would seem to get slow. I have a system resource monitor app in my Gnome panel, which I assume represents the available RAM (?). It shows a dark green area as being "Memory", and a light green area as "Cache". The "Cache" would slowly grow until it filled the whole graph, and then programs would get slow to load, or it would take a while to switch programs. I could alleviate the problem somewhat with this command, but eventually the computer cache fills up again, so it's only a bandaid: sudo sh -c "sync; echo 3 > /proc/sys/vm/drop_caches" So, I figured I'd get more RAM, so I replaced one 2GB stick with an 8GB stick, and now I have 10 GB ram. And my "cache" still slowly maxes out and my computer slows as a result. Also, sometimes the computer starts out with "cache" maxed when I first boot and log in. Not always though, I don't know if there's a pattern that determines why it happens. Why is Ubuntu using up so much cache? Is 10GB not enough for Ubuntu? Here's what my system monitor looks like in my Gnome panel. The middle square shows RAM usage. The light green area is the "cache": This is my memory and swap history, which doesn't seem to include any information about "cache". I realize at this point I'm not totally clear on the difference between "cache" and "swap":

  • Unity isn't starting on 13.10 (with Cinnamon 2.0 installed)

    Since upgrading to 13.10, I can't log in to unity desktop. Light dm works correctly, but attempting to log in tries to start the session then drops back to light. I've already dropped to terminal (ctrl+alt+f2) and done this: sudo apt-get update sudo apt-get install --reinstall ubuntu-desktop sudo apt-get install unity Logging in as a guest session also fails. Logging in to other window managers works with varying degrees of success. Note: I have Cinnamon 2.0 installed from PPA. I'm using a 2 monitor setup. Also of note is that the session prior to my upgrade to 13.10 the background of unity failed to display at all, instead showing what was there in the screen buffer from the previous frame. The entire OS worked correctly otherwise though, so I just ignored it for the session. No other upgrades or even updates were done prior to this occurring. My upgrade path to 13.10 was basically this: Install 13.04 alongside Windows 7, use ubuntu as a glorified web browser for a while, get updates (in preparation for 13.10), install 13.10. I also used Unity Tweak Tool to change some aspects of unity, particularly auto-hide. Any help or ideas would be appreciated, as I'm typing this on my phone :(

    I am currently messing around with Ambiance, trying to give Nautilus a dark sidebar (because I think it looks much better that way, especially with the current look having the dark-colored breadcrumbs clashing horribly with the light-colored sidebar). I have zero experience and knowledge of how to create GTK+ themes, and I couldn't find any documentation online, so I just made a copy of the folder for Ambiance under /usr/share/themes, renamed it "Ambiance Dark Sidebar" and just started messing with color values. As shown below, I found the value in nautilus.css needed to be tweaked to create the dark sidebar, but there is still one part that stubbornly stays light gray that I want to change so it matches the rest better (I'm not sure what the proper terminology is here, so I just provided a picture and marked it in red). Does anyone know what I need to do to change the color of this part so it matches the rest of the sidebar better? I already know from seeing themes like Adwaita Dark that this should be possible, but even after poking around in that I didn't find anything that seemed to help.   • Suspend/resume issue hp envy m6

    :) I just installed Ubuntu 13.10 on my HP envy m6. When I press the "power" button and select to suspend, it looks like it goes to sleep (power light flashing, as expected). When I press the power button to wake it (or anything else), it stops flashing and goes solid (as it should) but the screen is black. I tried CTRL+ALT+F1 but nothing seems to happen. Is there something I can do to get Ubuntu to resume from suspend? EDIT: I tried getting any updates for Ubuntu as well as updating my BIOS. Neither seems to have any effect. EDIT: Tried the 2nd script from Ubuntu 12.04 LTS suspend fix and it seemed to have no effect. Tried the 1st script and now I can't seem to suspend at all - Ubuntu seems to try to suspend and then immediately goes to the password prompt. With some combination of things I seem to be able to get a new crash, though, involving wpa_supplicant. I allowed it to submit feedback. My WiFi seems to be working fine (I assume this is what WPA is). EDIT: I know this is 'askubuntu', but I did try latest Linux Mint / Cinnamon. Results were exactly the same (black screen, power light solid after waking up - just as before, I can make it reboot by mashing CTRL+ALT+DEL but CTRL+ALT+F1/etc. doesn't work). Trying Ubuntu 12.04 next. EDIT: Ubuntu 12.04 WORKS! At least it seems to with a quick test. Came right back up after suspend. If I don't have any other problems and no answers are suggested, I'll make my own answer and accept it. Maybe someone can use this information to help troubleshoot the real issue. Would be nice to be on the latest version... but suspend would've been a deal-breaker for me. Hope this info helps someone.

  • Screen doesn't turn back on after resume on a Lenovo Thinkpad T420

    Every time I suspend my notebook (Lenovo Thinkpad T420 - Intel HD graphic card) on Oneiric Ocelot 11.10 and turn it back on, the screen is black. The backlight is on and the system itself loads fine, but the display somehow doesn't get back. The first time after a fresh reboot the screen isn't black, it is mostly white/light-gray and it looks a bit like a distorted image. The pixels fade in until it gets almost completely light-gray. I've got a workaround for this: I switch to the first terminal (CTRL+ALT+F1) and back to X (CTRL+ALT+F7). In most cases that helps. Sometimes, when there's still a problem, I log in on the first terminal and run "unity --reset". Then go back to X - this helps always. I can tell that the system comes back, because I can log in with my fingerprint reader (or wait a bit and put in the password) "blindly", then do the workaround - I am logged in after the screen comes back. So it's only the display that is not working. Any help or advice where to look would be appreciated.

    I have been following verification and validation questions here with my colleagues, yet we are unable to see the slight differences, probably caused by language barrier in technical English. An example: Requirement specification User wants to control the lights in 4 rooms by remote command sent from the UI for each room separately. Functional specification The UI will contain 4 checkboxes labelled according to rooms they control. When a checkbox is checked, the signal is sent to corresponding light. A green dot appears next to the checkbox When a checkbox is unchecked, the signal (turn off) is sent to corresponding light. A red dot appears next to the checkbox. Let me start with what I learned here: Verification, according to many great answers here, ensures that product reflects specified requirements - as functional spec is done by a producer based on requirements from customer, this one will be verified for completeness, correctness). Then design document will be checked against functional spec (it should design 4 checkboxes..), and the source code against design (is there a code for 4 checkboxes, functions to send the signals etc. - is it traceable to requirements). Okay, product is built and we need to test it, validate. Here comes our understanding trouble - validation should ensure the product meets requirements for its specific intended use which is basically business requirement (does it work? can I control the lights from the UI?) but testers will definitely work with the functional spec, making sure the checkboxes are there, working, labelled, etc. They are basically checking whether the requirements in functional spec were met in the final product, isn't that verification? (should not be, lets stick to ISO 12207 that only validation is the actual testing)

  • Mobile Web Framework that will only control rendering and page transitions

    I have been using jQueryMobile for a bit now, and there are some things I like about it and others I do not. First I will give a bit of background. I have a light weight mobile application that has a few configurations and 6 pages. Ideally I Would like to load all pages into the DOM (they interact with each other quite often and pages will be switched in the same frequency). The application will post for some JSON every n seconds and refresh the values on the page (yes it is primarily a information display app). with the jQuery Mobile framework the only real thing I like is how easy it is to have a standardized UI a crossed all devices and browsers, I'm really not using too much else out of the framework other than the basic page navigation (if you are familiar with the framework; a bare-bone multi-page design is all i need). Why I want to step away from jQueryMobile is how weighty it is. Not only do you need to include the mobile library, but also the base jQuery libraries. This I do not like because I'm not using jQuery anywhere else on the site. Any suggestions on light-weight mobile frameworks that have a similar rendering as jQueryMobile?

  • Why should I use MSBuild instead of Visual Studio Solution files?

    We're using TeamCity for continuous integration and it's building our releases via the solution file (.sln). I've used Makefiles in the past for various systems but never msbuild (which I've heard is sorta like Makefiles + XML mashup). I've seen many posts on how to use msbuild directly instead of the solution files but I don't see a very clear answer on why to do it. So, why should we bother migrating from solution files to an MSBuild 'makefile'? We do have a a couple of releases that differ by a #define (featurized builds) but for the most part everything works. The bigger concern is that now we'd have to maintain two systems when adding projects/source code. UPDATE: Can folks shed light on the lifecycle and interplay of the following three components? The Visual Studio .sln file The many project level .csproj files (which I understand an "sub" msbuild scripts) The custom msbuild script Is it safe to say that the .sln and .csproj are consumed/maintained as usual from within the Visual Studio IDE GUI while the custom msbuild script is hand-written and usually consumes the already existing individual .csproj "as-is"? That's one way I can see reduce overlap/duplicate in maintenance... Would appreciate some light on this from other folks' operational experience
